If you are wondering what to make for your loved one’s dessert this evening, look no further. Here is a delicious gooey chocolate Valentine Pudding that everyone loves! I placed a little heart cutter on the top before dusting to get the heart shape on the photo.
We found (surprisingly enough) that champagne goes very well with this dessert 😉

Ingredients
- 60g plain chocolate
- 65g caster sugar
- 40g unsalted butter plus extra for greasing ramekins
- 45g plain flour
- 1 large egg and 1 large egg yolk
- 1 teaspoon espresso powder
- pinch salt
- 2 70g ramekins
- icing sugar to dust
Method
- Preheat the oven to Gas mark 6, 200°C, fan 185°C
- Butter the two ramekins and then dust with a little caster sugar
- Break the chocolate into a bowl and add the butter
- Stand the bowl over a saucepan of simmering water and heat until melted (do NOT allow the chocolate to overheat or to boil (you could place the butter and chocolate into a microwave safe bowl and microwave on high in 20 second periods, stirring after each until melted)
- In a clean bowl, whisk together the egg, the egg yolk, the caster sugar, espresso powder and the pinch of salt
- Add your chocolate mixture and whisk again
- Now add your flour and whisk once more -make sure you do not over mix
- Whisk until just combined
- Pour the mixture into the prepared ramekins (you can prepare this recipe to this point if you want to make ahead)
- Now place in the oven on a thin baking tray for about 10/12 minutes
- Remove from the oven and using a small cocktail stick check your dessert is cooked by inserting the stick half an inch from the edge of the ramekins, the stick should come out clean, then use another cocktail stick and insert in the middle, this should still be sticky
- Cool for about 10 minutes on a wire rack then run a knife around the inside of the ramekins to loosen and turn out onto your serving plates
Dust with a little sieved icing sugar and serve.
